Tsai and Polly Talbott his wife founded their first restaurant, Blue Ginger, in Wellesley, Massachusetts, in 1998. Blue Ginger, an Asian Fusion restaurant, has received Zagat and James Beard awards, as well as numerous other regional honors. The restaurant’s first year, Tsai was selected “Chef of the Year” by Esquire Magazine. On March 30, 2010, Tsai created Blue Ginger Noodle Bar, a small restaurant within Blue Ginger.

After 19 years, Tsai decided to close Blue Ginger in June 2017.
